Kids After-School Snacks: Vegetable Egg 65

INGREDIENTS:

1. Egg – 5 nos

 2. Chopped onion – 3 tbs

3. Grated carrot – 2 tbs

 4. Chopped cauliflower – 3 tbs

 5. Chopped cabbage – 3 tbs

6. Chopped capsicum – 3 tbs

7. Green chilli – 3

8. Salt – to taste

9. Pepper powder -1 tsp

10. Comflour – 5 tps

11. Maida – 5 tps

12. Bread crumbs – as required

13. Oil

Method:

1. Break the eggs into a bowl and beat well. Add the vegetables, salt and pepper powder.

2. Pour it in a greased aluminium cake bowl and steam it in a pres-sure cooker without whistle for 3 – 5 mins.

3. Allow it to cool

4. Now cut the steamed vegetable egg into finger shape stripes.

5. In a small bowl, mix maida and comflour add water add bring it to a batter consistency.

6. Keep bread crumbs in a plate separately.

7. Keep a deep bottom pan,pour oil and keep it in medium flame.

8. Now dip the egg stripes in the batter,roll them in bread crumbs coat nicely and deep fry till golden brown.

9. Serve hot with pudina chutney.
